A New Favorite: Flourless Chocolate Fudge Crinkle Cookies

Written by Chris

Flourless Chocolate Fudge Crinkle Cookies Recipe

Baking cookies is a wonderful holiday tradition. Each year my kids and I bake several recipes to give to family, friends and teachers to show our appreciation.  It’s a fun activity to do as a family and the recipients are always so appreciative. We’ve added a new cookie to our “Holiday Favorites” list this year!

These chocolate gluten-free cookies are rich and chewy and ridiculously easy to make, with only a handful of ingredients! The texture is similar to that of meringue cookies or French macarons, yet the centers are chewy and fudgy like brownies. Even better, they are quick to make and no mixer is required (perfect for kids to make)!

Ingredients for 3 dozen cookies:

PREHEAT oven to 325° F. Line baking sheets with parchment paper.

COMBINE powdered sugar, baking cocoa, coffee granules and salt in large bowl; stir in morsels. Add egg whites and vanilla extract; stir until combined. The mixture should look a little like brownie batter.

DROP by level tablespoon 2 inches apart onto prepared baking sheets. If you want fluffier cookies, after you scoop the dough, place the baking sheet in the refrigerator for 5 minutes (this is completely optional).

BAKE for 13 to 15 minutes or until tops are cracked and shiny and edges are firm. Place baking sheet on wire rack and allow cookies to cool completely. Gently peel cookies off of parchment paper with your hands (I find it’s easiest this way) or a spatula.

DUST with additional powdered sugar before serving, if desired. Cookies hold well for 3 days if kept in an airtight container. They can also be frozen for up to 3 months.

Cook’s Tip: for Chocolate Fudge Coconut Crinkle Cookies, eliminate instant coffee and stir in 3/4 cup shredded sweetened coconut with the morsels.

No-bake Dessert: Chocolate Cheesecake Mousse Pie with Mocha Drizzle

Written by Milissa

Please enjoy this guest post by Milisa Armstrong of Miss in the Kitchen.

Chocolate Cheesecake Mousse Pie with Mocha Drizzle recipe

Chocolate pie is my favorite kind of pie but I don’t make it very often. Traditional chocolate cream pie takes a little time in the kitchen and then about 4 hours of chilling time. It is so hard for me to wait 4 hours for pie!

Today I’m sharing my new favorite chocolate pie with you. It is ready to eat in less than 20 minutes and you don’t even have to turn the oven on. It’s rich and decadent and the mocha drizzle gives it a little extra kick. I think chocolate and coffee were made for each other.

This is a perfect no-bake summer dessert. Just a few zaps of the microwave to melt the chocolate so you have very little cooking time and no heating up your kitchen. Plus it uses just a few simple ingredients that you likely have on hand. Now that’s hard to beat.

My family has a scale to help me measure the success of a new recipe. It ranges from okay, to good, to really good, and best thing I ever ate. This pie garnered the best thing I ever ate category!

Whether you serve this pie as a weeknight dessert or at your next neighborhood barbecue, it is sure to be a hit.

Chocolate Cheesecake Mousse Pie with Mocha Drizzle

Ingredients for 8 servings:

  • 1 1/2 cups plus 3 tablespoons heavy whipping cream, divided
  • 1/3 cup powdered sugar
  • 1 1/2 cups NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morselsdivided
  • 4 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • prepared chocolate crumb crust
  • 1 teaspoon espresso powder

BEAT 1 1/2 cups whipping cream with electric mixer until it starts to form peaks. Add powdered sugar, slowly beating until incorporated. Stop mixer and scrape down sides if necessary. Pour whipped cream into a bowl and cover with plastic wrap. Place in refrigerator.

PLACE 1 cup morsels and 2 tablespoons whipping cream in a microwave-safe bowl. Microwave on MEDIUM-HIGH (80%) power for 20 seconds; stir. Microwave at additional 10- to 20-second intervals, stirring until chocolate is melted and smooth.

PLACE cream cheese and melted chocolate in mixer bowl; beat at medium speed until well combined. Add vanilla extract and mix until combined. Fold whipped cream into chocolate mixture until well combined and no white streaks remain. Pour into prepared pie crust.

PLACE remaining 1/2 cup morsels, remaining 1 tablespoon whipping cream and espresso powder in a small, microwave-safe bowl. Microwave on MEDIUM-HIGH (80%) power for 20 seconds; stir. Microwave at additional 10- to 20-second intervals, stirring until chocolate is melted and smooth. Pour into small, resealable plastic bag; clip the corner off the bag. Drizzle over pie.

REFRIGERATE for 10 minutes or until mocha drizzle has set.

Abuelita Ice Cream recipe

Who doesn’t love chocolate ice cream? So fitting that this indulgent holiday happens just at the start of summer, it’s a perfect excuse to kick off ice cream making at my house. To celebrate this delectable food holiday, here are three different ways to savor chocolate ice cream (or chocolate + ice cream) today, and all summer long.

Abuelita Ice Cream

Make your own chocolate ice cream, with Abuelita’s special chocolatey cinnamon flavor shown above. It’s easy and fun!

Ingredients for 6 cups:

  • 2 cans (7.6 fluid ounces each) NESTLÉ Media Crema Ligera Lite Table Cream
  • 4 tablets (90 grams each) NESTLÉ ABUELITA Chocolate, chopped
  • 2 1/2 cups lowfat milk

HEAT media crema and Abuelita chocolate in medium, heavy-duty saucepan over medium-low heat, stirring constantly, until chocolate is completely dissolved and mixture is smooth. Remove from heat; stir in milk.

POUR mixture into 13 x 9-inch baking pan; cover with plastic wrap. Freeze, stirring every hour to break up ice crystals, for 4 to 5 hours or until set.

Bachelor in the Kitchen: Memorial Day BBQ

Written by Nick

Nescafé-Balsamic BBQ Sauce Recipe

Memorial Day is a day of remembrance. It’s a day for honor, hanging flags and parades. For many, Memorial Day weekend is also a time for backyard barbeques and the official kickoff of summer.

If you’re hoping for a Memorial Day barbeque that no one will forget… it’s all about the sauce. Making your own BBQ sauce is the perfect way to add your personal touch to any backyard barbeque.

BBQ sauce is a matter of taste. Some like it spicy, smoky, sweet or sour; it’s really up to you. That’s why it’s essential to have a guide to help you tailor your sauce. Meals.com has a great article with an example for a basic BBQ sauce and how to customize it to your liking. It’s a fantastic resource to help you find your “signature” sauce.

I’ve been making my own BBQ sauces for a while now. I tend to go off-recipe, which sometimes leads to disaster…and I generally try to avoid disaster. So, if you haven’t yet nailed down your “signature sauce” you might want to consider the Nescafé-Balsamic BBQ Sauce. It’s a tried and tested recipe that is bursting with flavor and perfect on all your favorite BBQ meats.

Nescafé-Balsamic BBQ Sauce

Ingredients for 1 3/4 cups:

  • 1 tablespoon extra virgin olive oil
  • 4 large cloves garlic, finely chopped
  • 1 cup ketchup
  • 2/3 cup honey
  • 1/4 cup balsamic vinegar
  • 1/4 cup reduced-sodium soy sauce
  • 1 tablespoon NESCAFÉ TASTER’S CHOICE House Blend 100% Pure Instant Coffee Granules

HEAT oil in small saucepan over medium heat. Add garlic; cook for 30 seconds. Whisk in ketchup, honey, vinegar, soy sauce and coffee granules. Reduce heat to medium-low; cook, stirring occasionally, for 10 minutes.

Creamy Smoothies Perfect for Summer

Super Fruit Bliss Green Smoothie recipe

We love smoothies here at Nestlé Kitchens. I don’t know if you’ve noticed, but I’ve been obsessed with mixing up green concoctions for fruit smoothies (or margaritas), and my colleague Chris has been using Natural Bliss to create creamy smoothies as well. They are my favorite thing to drink on a warm summer morning, and also just after a run. It’s a good treat when you want to cut down on ice cream, and using Natural Bliss gives smoothies that creaminess you crave.

Our friend Susan of She’s Becoming Doughmesstic created a bunch of delicious, interesting new smoothies using Natural Bliss, and I just can’t get enough!

Here are a few of them for you to try. You can find the rest on Meals.com.
