Get Up and Go! Puffy Pumpkin Pancakes & Early Morning Pumpkin Maple Oatmeal

Puffy Pumpkin Pancakes

Mmm…hot breakfast on a cold morning. There’s nothing like eating something warm and satisfying to start the day off right, so I thought I’d share some delicious – and nutritious – breakfast ideas to help you warm up your mornings.

My secret ingredient? Pumpkin! Not only does pumpkin add great flavor, it’s also an excellent low-calorie and low-fat source of Vitamin A, and fiber in every 1/2 cup serving. That’s good nutrition in every bite!

These easy-to-make pumpkin pancakes are a beautiful golden color and their puffiness makes them fun to eat. Pumpkin adds just the right touch of flavor and moistness to make these pancakes a new family favorite.

Pumpkin Maple Oatmeal

Pumpkin and maple team up to make everyday oatmeal a real treat. It’s quick and easy to make, and it will fill you up and keep you satisfied all morning.

Also, try putting pumpkin in breads or muffins in the morning.

I have to say I prefer the savory route of a cold morning – eggs and bacon. I really don’t think there is much improvement over that, washed down with pints of good tea.
