One thing that’s really important to me is feeding my family meals that are healthy and delicious. I love to take traditional dishes and create lighter, healthier versions; sometimes prompting my 7-yr old triplets to clamor for more!
This recipe uses Nescafe Taster’s Choice for just a hint of deep coffee flavor, the traditional peanuts, as well as cream of tartar (used to discourage crystallization). You can also use chocolate baking cocoa in place of the coffee for a rich chocolate candy brittle.
This recipe for Coffee Peanut Brittle, however, is one of my indulgences. It’s so good I can never stop at just one bite – um, make that one handful. I am completely addicted, which has only happened with three recipes in my entire career at Nestle. The other two are Easy Toffee Candy and Caramel Candied Apples.
