Chocolate Swirled Pink Peppermint Pie Recipe

This pie had me at first glance! Inspiration for recipes comes from many places. Sometimes looking in the past brings us a new idea for the future. That was the case for this pink peppermint and chocolate swirled delight. Flipping through a 1980 Toll House Heritage Cookbook, I landed on the page featuring Pink Peppermint Pie and knew that it had to be resurrected, adapted and brought to your table.

The first time this pie was prepared in the kitchen, it attracted tasters near and far. Perhaps it was its bright pink color, refreshing peppermint scent and beautiful swirls that won them over!

Chocolate Swirled Pink Peppermint Pie

Ingredients needed for 8 servings:

Directions:

HEAT morsels and 1/3 cup evaporated milk in small saucepan over low heat, stirring until morsels are melted and mixture is smooth. Remove from heat; cover with plastic wrap and set aside.

COMBINE marshmallows, remaining evaporated milk, water, salt, peppermint extract and food coloring in medium saucepan. Heat, stirring constantly, over medium-low heat, just until marshmallows melt and mixture is smooth. Remove from heat; transfer to a large bowl. Refrigerate for about 20 to 30 minutes, stirring every 10 minutes with wire whisk until slightly thickened, still fluid but not set. Gently fold in whipped topping until blended.

SPREAD half the peppermint mixture into pie shell. Dollop with half the chocolate mixture. With a knife, swirl chocolate mixture in a figure-eight pattern. Repeat procedure with remaining peppermint and chocolate mixtures. Refrigerate for 3 hours or until firm.

Kitchen Note: We found that having two swirled layers provided more chocolate throughout the pie and in each bite.

Don’t forget to swirl around the table with your Valentine but be careful, no dropping of pie allowed!
