‘Tis the season for entertaining, with fall sports, school parties and the holidays coming up. Entertaining can be a challenge when you’re pressed for time, especially during the holiday season, so quick and easy appetizer dishes and dips can be a real savior. Spinach artichoke dip is no stranger to anyone; almost every restaurant has it in their appetizer menu, and it is much easier to make at home than you think! In this recipe, I just combine creamed spinach, cream cheese, canned artichoke hearts, garlic and chicken bouillon and heat it up in the oven. Just like that you have a restaurant-style spinach artichoke dip to serve your guests. This dip is a must when I entertain and it’s a request for every potluck I attend.
The Maggi Cheesy Dip is a creamy indulgent cheese sauce with diced green chiles for an added kick. I used chicken bouillon to season it and Media Crema – a shelf-stable Mexican cream – to make it creamy and smooth (you can find Media Crema in the international or Hispanic section of your local grocer). To make the dip lighter, I use low-fat cheeses and media crema ligera, which has 50% less fat than the original. I serve it with vegetables and whole grain crackers or baked tortilla chips to control the calories a bit without sacrificing taste. Maybe the kids will end up eating more veggies with this dip!
